Remove preceeding /v1 for individual services

Services shall be exposed via API Gateway - therefore the preceeding "/v1" is not required anymore

The preceding /v1 should not be removed from the applications.
It must remain to ensure backward compatibility.

In the WSO2 API Gateway, versioning is handled differently; however, the preceding /v1 is still taken into account and used for API versioning. Therefore, no changes are required in this regard to our (backend) specifications of the MW-SDN domain.
