Create docker images for M1/M2 chips

Many people will be using newer macbooks to run the sandbox.
Make sure we have docker images which are compatible with M1/M2 chips.
Update docs accordingly, to give this option. Also update the curl command accordingly to pull the correct docker image and docker-compose yml.

Ran through the steps on the "Aztec Sandbox Quickstart" and can confirm they work on M2.

Note that the initial accounts I got were different from the hardcoded ones suggested in the quickstart guide. I manually edited the aliases / commands for them to go through.
