remove pinned parse5 and jsdom version from package.json

jsdom v27.0.1 uses new parse5 major release v8 which breaks our tests.

With #3921 the parse5 version was set with overrides back to v7.

This should be removed asap when new v8 releases are working with our setup.

In #3925 we also pinned jsdom (to v27.0.0). This should also be removed.

I think, if issue jsdom/jsdom#3959 is solved, we can give it another try 🙂

After switching from jest to vitest the new jsdom releases are working. Pinned parse5 is removed, jsdom version is back on latest.
