Overview
Promotes Smart Accounts Kit documentation to v1.7.0 by updating docusaurus.config.js so lastVersion and the version dropdown label point at 1.7.0 instead of 1.6.0.

The versioned-docs set is trimmed: 1.0.0 and 1.1.0 snapshots are removed (large deletions under gator_versioned_docs/version-1.0.0 and version-1.1.0), and gator_versions.json now keeps 1.7.0, 1.6.0, 1.5.0, and 1.2.0 only. The new 1.7.0 changelog documents facilitator-address constants for delegation redemption and updated behavior for experimental createx402DelegationProvider, plus contract/enforcer address tables for that release.
