Update nbconvert package from 7.17.0 to 7.17.1

This PR:

• Updates uv.lock to include upgrade to package `nbconvert from 7.17.0 to 7.17.1. This was the subject of PR Bump nbconvert from 7.17.0 to 7.17.1 #1110. But we could not get its tests to pass.
• Fixes typo in CHANGELOG.md
