docs: use x.x.x placeholder in install snippets#3

The 0.3.0/0.3.1 versions stamped on the install snippets weren't actually on JitPack (last published is 0.2.0). Pinning a specific version on the README forces a sync between every pom bump and the README that we kept losing — placeholder reads as 'check the badge above for the latest tag', which is the truth.
