`Table<RowType>` is not assignable to `Table<unknown>`

Describe the bug and the steps to reproduce it

When trying to write helper functions that accept any table, Table<unknown> doesn't work as a parameter type, as specific table instances aren't assignable to it. This has been fairly easy to work around with making helpers generic, however it's still very unexpected every time.
