[BEAM-3715] Explicitly exclude further optional Cascading deps

This excludes another flaky optional dependency of elasticsearch-hadoop in the HifIO test dependencies.

I'm not really certain of how far this needs to go. There are quite a few optional deps.

I have now systematically excluded all optional deps, as I believe none are needed for the test here.
