docs: fix broken star history chart in README - #1748

The star history chart embedded in the README stopped loading because the upstream service is affected by GitHub stargazer API restrictions. Point the chart at a working alternative so the graph renders correctly again.

The star history chart in the README is currently broken and does not render, because the service it relies on is affected by GitHub stargazer API restrictions. This PR updates the chart links to a working alternative so the graph loads correctly. No functional code is affected, only the README.
