[test](regression) Add Iceberg v3 row lineage coverage

What problem does this PR solve?

Add regression coverage for Iceberg v3 row lineage scenarios, including Doris-created tables, Spark interoperability, DML mode matrices, schema evolution, time travel, deletion vector interoperability, large stability, and randomized cross-engine checks. The change also exposes Spark ThriftServer access in the Iceberg docker environment and adds regression framework helpers for running Spark Iceberg SQL through Hive JDBC.
