[fix][test] Prevent OOM in test by not spying invocations in SimpleProducerConsumerTest

Motivation

• there are OOMs in test runs such as https://github.com/apache/pulsar/actions/runs/11390425506/job/31692462848?pr=23449#step:11:1687
• it's not necessary to spy invocations that consume a lot of memory

Modifications

• remove configuration that enabled spying of invocations that was added in [improve][broker][PIP-384] Decouple Bookkeeper client from ManagedLedgerStorage and enable multiple ManagedLedgerFactory instances #23313 since it was assumed that it was necessary
