Also upgraded asciidoctor-pdf to the latest version to see if it would fix the build issues. Together with the jruby-gradle-plugin not being able to resolve with its declared dependencies anymore, it also doesn't seem to run on Gradle 8.8. |

Description
Just as with asciidoctorj we need to fix the dependencies for the jruby-gradle-plugin here as well.
Also updates Gradle itself to the latest version, 8.8.
