Deploy test/prod VC-AuthN with HA Redis

Once https://github.com/openwallet-foundation/acapy-vc-authn-oidc/issues/957 is complete and a corresponding chart is published in `openwallet-foundation/helm-charts` redeploy VC-AuthN using a HA Redis service.
