Add a nice little animation when switching between light/dark modes. It's a bit of code, but I tried to make it as self-contained as possible. Should be ~0 maintenance, but there's also a comment at the top of the file that encourages deletion if it breaks. It respects users' reduced-motion preferences (the animation is disabled if users don't like animations).
