feat(pydantic-ai): Record gen_ai.output.messages including ThinkingPart

Description

Set structured gen_ai.output.messages instead of deprecated gen_ai.response.tool_calls and gen_ai.response.text attributes.

Handle previous output types, and additionally ThinkingPart.
