Add support for numpy > 2

As numpy 1 can be considered legacy and the last version is almost a year old

I am concerned about this update since langchain-core relies on numpy ^1.24.0

It looks like LangChain now support numpy v2. We will investigate the needed changes.

This could be fixed by #251

Some additional fixes were required in that PR, because in numpy's latest version, embedding vector's string come out as

'[np.float64(1.5256406188220306), np.float64(0.02977977998198919), np.float64(-1.0862719134926553)]'

rather than

[1.5256406188220306, 0.02977977998198919, -1.0862719134926553]

hence corrupting our Insert and other query statements.
