To document the REST Api we should add OpenApi definition through Azure Api Management once the Azure Functions are deployed.

Follow this tutorial to get started once we have the first working version of the Functions deployed.
Describe alternatives you've considered
There are other tutorials on adding OpenApi definitions directly from within ASP .net core. However, they seem more like a workaround compared to the Microsoft tutorial linked above.
