Adds a self-contained e2e under e2e/starrocks/ that stands up Quickwit, a StarRocks AllInOne, and a thin Python shim, then drives the full catalog → schema → query flow. The companion REPORT.md enumerates the ES-compat gaps that block direct StarRocks → Quickwit usage and proposes a localized fix for each. The shim is the workaround used to demonstrate the metadata flow today; once the fixes proposed in REPORT.md ship, the shim is unnecessary.
