Node 14 is LTS and Node 16 will be LTS in two weeks. Node 12 will be EOL in April and we'd rather not be stuck supporting it for the lifetime of SvelteKit 1.0.
There's also been some debate about whether we should drop Node 14 support, but that seems like not a good idea at the moment because Lambda and the serverless frameworks built on it like Netlify don't support Node 16 yet.
May solve or help with #2480 as it sounds like Vite does not support
