In the scope of https://wearezeta.atlassian.net/browse/WPB-23717, more specifically https://wearezeta.atlassian.net/browse/WPB-14830 we want to upgrade cassandra. Code seems compatible 3.11 | 4.0, so this only updates the cassandra images used by default in tests.
As a follow-up it makes sense to switch to 4.1.x, but while migrating existing deployments of cassandra the upgrade path is 3.11 -> 4.0 -> 4.1, so the 4.1 upgrade I'll do in a follow-up PR.
