docs(squad): correct Sam MongoDB guidance

Follow-up to PR #346 / issue #345.

PR #346 merged before the final Scribe correction commit landed. This PR carries only that correction onto dev:

• replaces stale Sam history guidance that recommended MongoDB 8.0 and the legacy mongo-data volume
• documents the accepted mongo:7 + mongo-data-v7 fix
• preserves reviewer lockout by recording the Scribe correction rather than Sam self-revising the rejected artifact

No production behavior changes.
